What’s That Delicious Smell?
Back in the Nature’s Corner kitchen there’s always something going on. Here I caught Gerri, our resident food magician, Lauren, our illustrious produce manager and a very hungry Jude sampling Gerri’s latest creation:Roasted Sunchokes and Sweet Potatoes. This is one hot, hearty dish that really shows off one of Lauren’s best finds Local Sunchokes. These tasty tubers have a distinctive artichoke flavor but actually come from that most familiar of plants, the sunflower. Between these guys and the local fingerling sweet potatoes this dish isn’t just a delight to the palate but is also packed with nutrients-vitamins, minerals, fiber, everything you need for a very happy belly. Best. Kale. Ever.
Russian Red Kale is my absolute favorite green, not least of all because it’s purple! It’s sweet, tangy, a little peppery, as versatile as any green and it’s LOCAL! Whenever I see this gorgeous veggie on our shelves I pick up two bunches. One to gnaw on on my way home and one to actually cook. For those of you who are color eaters (different colors, different nutrients), check out this recipe. It pairs this beautiful green/purple plant with bright orange squash. Between just these two ingredients you end up loading up on beta carotene, potassium, magnesium, vitamins K, C, E and B6, leutein, calcium and fiber. Check it out!

AAAAnd…That’s a Wrap!
Well hello there, lunch-seekers! Take a look at this awesome Tuna and Avocado Collard Green wrap we whipped up this morning over at the Corner. Inside you’ll find carrots and sprouts adding texture and crunch to this protein-packed green powerhouse of a wrap and the Collards mean this baby is as wheat-free as they come, super low in carbs and… oh yeah, it’s delicious. I got to thinking though, here at Nature’s Corner, we’re known for our custom wraps and sandwiches but what are other folk up to with their flatbreads? Check out Angie’s Kitchen for an awesome recipe for a hot Roasted Mushroom and Pepper Wrap. You can pick up all the ingredients here and make this one in minutes. To quote Julia, “Bon Appetit!”

Now that we’ve found RUTABAGAS what are we gonna do with them?
I know you’ve all at least heard of rutabagas before but really, how many people actually know what they are and what to do with them? Well, when I saw how absolutely beautiful the Local, Organic Rutabagas were at Nature’s Corner this morning I knew I needed to tell you about them.
